Coconana Spiced Crumb Muffins

I haven’t a clue what to call these babies.  It’s complicated.

“Divine” would be fitting.

Coconana Spiced Crumb Muffin

They have a heavy dose of smashed banana and shredded coconut, a kick of cinnamon and allspice…all topped off with a delectable crumb topping.

So here you have it…

Coconana Spiced Crumb Muffins

{oooh aaaaah}

Ingredients:

    • 1 1/2 cups of whole wheat flour (or go halvies with white flour}
    • 1 teaspoon of baking soda
    • 1 1/2 teaspoons of baking powder
    • 1/2 teaspoon of salt
    • 1/2 teaspoon of allspice {or cloves}
    • 1/2 teaspoon of ground cinnamon
    • 3 bananas, smashed
    • 1/2 cup of brown sugar
    • 1/2 cup of shredded coconut
    • 1 egg, lightly beaten
    • 1/3 cup of melted butter

Crumb Topping {optional}:

    • 2 tablespoons of whole wheat flour
    • 1/4 teaspoon of ground cinnamon
    • 1 tablespoon of melted butter
    • 3 tablespoons of brown sugar

Directions:

  • Preheat oven to 375*, lightly spray 12 muffin cups (or use liners, spray them lightly too)
  • In a large bowl, mix together the flour, baking soda, baking powder, salt, allspice and cinnamon.
  • In another bowl, beat together bananas, brown sugar, coconut, egg, and melted butter.
  • Stir the banana mixture into the flour mixture until just moistened.  Spoon batter into prepared muffin cups, filling 3/4 full.
  • Optional crumb topping: in a small bowl, combine the topping ingredients {flour, cinnamon, butter and brown sugar} until they resemble course cornmeal.  Sprinkle topping over muffins.
  • Bake in preheated over for 18-20 minutes, until a toothpick inserted into center of a muffin comes out clean.

(To try something different, replace the bananas with a cup of fresh or frozen blueberries and 3/4 cup of applesauce}

After inhaling one of these babies, my hubby boldly declared…”these are the best muffins!  Like, ever”.

Okay fine, maybe he didn’t say “like”.

But there was passion blazing in his eyes…so I forgot his exact words.

They are that good.

I stumbled across the word I chose and lettered fo I stumbled across the word I chose and lettered for 2023. Held. I thought it might reopen old ache. Instead, it reminded me of the deeper song beneath our hardest seasons: even in the unraveling, we were held.

Be tender with yourself.
Honor the slow work of becoming.
And step into this year knowing—
you are held.
