Wintery Morning Motivation: Baked Oatmeal

When flakes of white start to cloak the ground, our breath fogs up the window pane, and the warmth of our bed threatens to hold us hostage until the final thaw of Spring, there’s nothing like a scrumptious, warm breakfast to woo us out from underneath our covers.

Need a little wintery morning motivation?

Try this deliciously simply, surprisingly decadent…

Baked Oatmeal

Baked Oatmeal

Ingredients:

        • 3 cups of old fashioned oats
        • 3/4 cup of brown sugar
        • 2 teaspoon of ground cinnamon
        • 1/4 teaspoon of grated nutmeg
        • 1/4 teaspoon of allspice
        • 2 teaspoons of baking powder
        • 1 teaspoon of salt
        • 1 cup of milk
        • 1/2 cup of melted butter
        • 2 large eggs
        • 1 teaspoon of vanilla extract
        • a handful of raisins, dried cranberries or cherries (optional)
        • chopped nuts, fresh berries, cream/milk for topping

Directions:

  • Preheat oven to 350* (with rack in middle)
  • In a bowl, whisk together oats, sugar, cinnamon, nutmeg, allspice, baking powder and salt
  • In a separate bowl, whisk together the milk, butter, eggs, and vanilla extract.
  • Add the wet to the dry and mix well.  Fold in dried fruit (coconut, if you’re feeling sassy)
  • Pour into lightly greased baking dish (9×13)
  • Place in oven and bake for 25-30 minutes, or until firm to the touch
  • Remove from oven and spoon into serving bowls.
  • Top with fresh fruit, nuts, milk…and promptly devour.

{This recipe will feed 8 models, 4 adults, or 2 hungry women}

Isaiah 61 has been our marriage verse for more tha Isaiah 61 has been our marriage verse for more than two decades.
Words we loved long before we fully understood them.

Walking through hard things
didn’t weaken those verses,
it gave them flesh.
It taught us what it means
to bind up the brokenhearted.
To sit with sorrow.
To trust God with ashes
before beauty ever appears.
