Honey Whole Wheat Bread with Molasses

We’ve been making our own bread for a few years now, sans bread machine, and with all the different recipes we’ve tried and tweaked, this is – hands down – our favorite.  It has fast become our go-to sandwich bread.

Now, it’s no beer bread, but it’s delish none the less {and it’s far more versatile}.

It is moist, soft, flavorful, and slightly sweet.  And It slices beautifully!

And because I’d hate for you to think I’m cooler than I am… I can’t take credit for making this stuff.  Ever.  I haven’t pulled this recipe off once.  My hubby is the bread baker in the family.  He makes 4 loaves at a time…and I eat 4 slices at a time.

We make a dynamite team, ya’ll.  He bakes, I eat.

Then in celebration…I make a big, fluffy muffin-top.

Honey Whole Wheat Bread with Molasses

Ingredients:

    • 1 1/2 cups hot water
    • 3 tablespoons of oil (we’ve tried vegetable and coconut oil)
    • 1/4 cup of honey
    • 1 1/2 tablespoons of molasses
    • 1/2 tablespoon of salt
    • 4 cups of whole wheat flour
    • 1/2 tablespoon of yeast

Directions:

  • In a 5 quart mixing bowl, combine water, oil, honey, molasses and salt, and mix well.
  • In a smaller bowl, mix 1 1/2 cups of flour with the yeast. Add this to the liquid, and using the paddle or whisk, mix on speed 3 for 5 minutes.
  • Change to a dough hook. Add remaining flour and mix on speed 2 for 5 minutes. Cover and let rise for 30 minutes to an hour, or until double in size.
  • *When the dough has risen, transfer it onto a lightly floured surface and use a rolling pin to flatten it into a rectangle, about 10×12 inches (if using small loaf pans, split this dough in half and roll to the appropriate size for your pan).
  • Roll the dough up long ways, and pinch the ends together. Put in a greased, floured loaf pan, and let rise for 45 minutes to an hour.
  • Bake at 350* for 40 – 45 minutes (or 30-40 minutes for smaller loaves). You’ll know the bread is done when the top is nicely browned, and if when you thump the bottom of the loaf, it sounds hollow.
  • Rub butter over the top of the loaf after you take it out of the oven to keep the crust soft.

If Using a bread machine:

  • Put the ingredients into the bread machine in order, and press the dough setting.
  • Pick up from the 4th step* and proceed as instructed above.
