Baked Tilapia with Dill Sauce

There is no question: I loved being pregnant, and so enjoyed nursing my little ones. 

The downside, however, is that they officially sucked my brains out.

And I’m only sort of kidding.

I combat this miserable truth by eating as much yummy fish as I can!

While salmon remains my fav, tilapia is considerably cheaper and when done well, is just as delish!

The increase in these fabulous fatty acids has plumped up my brilliance (ahem) and has imparted the smarts enough to catch every single 2 for $7 frozen Tilapia fillet sale at Meijer.  Score!!

While our grill was still buried under a foot of snow last month, I went on the hunt for the perfect baked tilapia recipe.  And I found it! 

Sadly, in my state of “beautiful food euphoria”, I forgot to plop a dollop of dill sauce on the plate before snapping a shot of it.  So just pretend it’s there, okay?  It is ridiculously good stuff that you won’t want to miss out on!

Baked Tilapia with Dill Sauce

                Ingredients:

      • 4 tilapia fillets
      • salt and pepper to taste
      • 1 tablespoon of Cajun seasoning (recipe below)
      • 1 lemon, thinly sliced
      • 1/4 cup of mayonnaise
      • 1/2 cup of sour cream
      • 1/8 teaspoon of garlic powder
      • 1 teaspoon of fresh lemon juice
      • 2 tablespoons of fresh dill (I used dried)

       

        Directions:

      • Preheat oven to 350* and lightly grease a 9×13 baking dish
      • Season the tilapia fillets with salt, pepper and Cajun seasoning on both sides.  Arrange the seasoned fillets in a single layer in the baking dish.  Place a layer of lemon slices over the fillets. 
      • Bake uncovered for 15 to 20 minutes in the preheated oven, or until fish flakes easily with a fork.
      • While the fish is baking, mix together the mayo, sour cream, garlic powder, lemon juice and dill in a little dish, and prepare your grains and side veggies.
      • I served this tilapia on a bed of wild rice, with sautéed asparagus {my hubby’s fav} and peas.

      Cajun Spice Mix (in case, like me, you couldn’t find this stuff in your cupboard)…

    • 2 teaspoons of salt
    • 2 teaspoons of garlic powder
    • 2 1/2 teaspoons of paprika
    • 1 teaspoon of ground black pepper
    • 1 teaspoon of onion powder
    • 1 teaspoon of cayenne pepper
    • 1 1/4 teaspoons of dried oregano
    • 1 1/4 teaspoons of dried thyme (I used tarragon)
    • 1/2 teaspoon of red pepper flakes (optional)
